I'm not looking for things like Harry Potter as my interests lie more in adult reading like A Song of Ice and Fire, Dark Tower, and Sword of Truth. Here are the series I've read and enjoyed:
A Song of Ice and Fire
The Dark Tower
Sword of Truth
Otherland
Wheel of Time
Assassin's Quest
... and others from Dragonlance, Forgotten Realms, and David Eddings.
So does anyone know of anything really good I am missing out on? There's a lot of fantasy books out there at the library or the book store and I am just looking for some ideas.

toddlong... chronicles were what got me hooked on the genre altogether back in the day. i was never more upset than when tanis got killed off in later books.

Piers Anthony wrote a series called The Incarnations of Immortality. At the library pick up
On a Pale Horse .. That is the first book.
Terry Brooks has a "Sword" series. Ask your librarian where to start.
Asimov !! If you have not read his Foundation series you are in for a real treat.
Read some Terry Pratchett such as Going Postal for some ha ha fun while reading.
Mercedes Lackey: Try her "Companion" series. Sorry can't remember the title of the first.. again you librarian could help or just look inside the cover for the lists.
Anne McCaffery: Her Series is the Dragons of Pern. I did not read these in exact order.

Fritz Leiber I was googling and it looks like they are reprinting some of his Fafhred and the Grey Mouser books (not comics) Try your library for older additions or a used book store.
If you enjoy Leiber then tackle Edgar Rice Burroughs ... he not only wrote the Tarzan series ... he also wrote some delightful sci-fi....

Yes, David Weber has a great series for sci-fi--The Honor Harrington series is fantastic. Try these other authors too
Jim Butcher has a fantasy series that is 180 degrees away from his Dresden Files that is extraordinary and I am anxiously awaiting his continuation of that series.
Michelle Sagara has a great series and all of the books start with ' Cast in...., she also writes under the name of Michelle West.

Just about everything by David Weber. I've never been dissapointed with his stories. In fact, once you start reading it's hard to put down. If anything read the series of books(I think 6) about the character Honor Harrington. You'll be hooked,lol.

There is always Dr.Who and this new show on BBC America called Torchwood. I have been a Dr.Who fan since Tom Baker was the doctor. But, it is Sci-Fi but it has a twist to it and is very enjoyable. Check it out sometime, it can also be seen on PBS. Also, as far as books check out something from Issac Asimov, they were always a good read

i'm a brilliant fan of Terry Pratchett's Discworld universe. these days, i all started shifting into John Ringo's stuff. he's have been given a pair distinctive sci-fi/secret sequence going. i'm taking part in his Ghost books (i've got study the 1st 2 and have #3), Von Neumann's conflict is impressive, and that i'm extraordinarily much accomplished with Hell's Faire, it particularly is yet another stable one.

how about Stephen Donaldson. He wrote the Chronicles of Thomas Covenant series, The Gap through Space, & Mordant's Need. All great books.
He has a Masters Degree in English, so you may need a dictionary handy.

This may be obvious, but make sure you've read the Dragonlance Chronicles. I'd hate to assume its obvious and have you miss out on those. I read them every couple of years.

umm, Actually i have a collection of books that are good,well some are for young adults and all, for me Spiderwick Chronicles
is the best! I mean sure they are for young adults but the are based on fantasies, adventures and wit.
