Greece is about the only European country that I cant book a holiday to during this period.
The weather is better there than some of the other destinations offered during this period.

November to April is not a good time to visit the islands. You can't go swimming, they are very deserted and the weather is not so fit for island type holidays, and British tourists usually go to the islands, especially through tour operators. However, Greece has wonderful places to visit all year round. You can spend more time in Athens, visiting the sites, you can go to Delphi and combine it with the ski centre, you can go to the impressive Meteora with the monasteries hanging on top of huge rocks, or to Zagorohoria, the wonderful vernacular villages in an amazing landscape with rivers and gorges. So, all you need to do is buy a plane ticket by yourself (you can find cheap tickets with BA or Easyjet), find nice hotels with our help here or through the internet and book them, and enjoy your visit. You don't need the tour operators.

Well, all tour operators in Europe (not just the UK) offer two different types of holiday packages during winter.
Either "Sun Holidays" or "Ski Holidays".
Surely because of the weather conditions (though in general it's a mild winter we have in Greece), no sun holidays are available during the period requested.
There are a couple of ski resorts in Greece, yet there are only small chalets that are always sold to the local market, so foreign tour operators prefer other European destinations where more & bigger hotels are available.
Therefore, if you're after a sun holiday during winter, you must go for a long haul destination, otherwise you may visit Greece during summer.

The fact that very few tourists choose Greece, as their winter vacation destination, has as a result, about 95% of hotels and relative amenities, to be closed during that period. So, tour operators arrange other destinations. However, as the first answerer points, Athens can be a good destination for winter holidays on account of many things to do and see.
In general, the weather during the last 5-10 years was far milder than it used to be. Many more sunny days with fewer days of real cold. So likely, you can get some sun too.No sea bathing though, unless you are into extreme sports. Still, many people do, all the winter round.
