Little Shop of Horrors (1960)
"The shooting schedule for this film was two days. Although the film is legendary for having been shot in only two days, Jonathan Haze recalled in "The Little Shop of Horrors Book" that he was called back several weeks later for re-shoots."

The Terror (1963)
"The film was reportedly largely improvised by the cast, during a weekend left over from shooting The Raven. The Terror was ultimately shot over four days and used the same sets before they were taken down."

I'm certain that there are others. I just have to rummage through my memory some more. I remembered Roger Corman mentioning these during an interview.

Million Dollar Baby was made in about 6 weeks - although that might just be principle photography and not including preproduction, editing, etc.

Seems like Lost in Translation only had a few weeks of principle photography as well. (I just checked IMDb and it was shot in 27 days)

As I recall, Black Knight with Martin Lawrance was made pretty quick as well. In fact, I think it went from start of shooting to release in about 2 months.

And I know lots of small or independent films have been made on very tight schedules.

Might be Andy Warhol's 24 which was a film of a building filmed for 24 hours (one day shoot) and then played in real time for it's audience. Thus making it the quickest shoot and the longest film at the same time.

That Andy was such a wag!
