is there a way to soften the sound without compromising the seal?

Clean both the seal AND the mating surface with warm water. Any sticky food residue on either surface will make that sound. If that doesn't do it, then the sound you are hearing is probably just the sound of the magnetic seal pulling away. If the fridge is old, then the rubber in the seal could be getting dried out and making a cracking sound. If thats the case, you will have to live with it since buying a replacement seal for an old appliance will be nearly impossible.
