In bread dough the yeast uses sugar for food and produces carbon dioxide (and alcohol which evaporates during baking). The carbon dioxide bubbles are trapped in the elastic bread dough and the dough rises.

In cake, the sugar is not being used up. Yeast in bread dough is a living organism and it is using up some of the sugar. Therefore, cake still has its sugar and bread has less sugar.

Yeast consumes sugar and then it releases CO2. The sugar in cake mix is not consumed but consolodated into the mix.
