I got an email asking for dinner ideas for a newly divorced dad looking for some recipes for him and the kids. From the email I gathered he had full custody. So I put together a few quick tips, an idea or two about a weekly meal plan and even some shopping tips. After I sent the email I started wondering what the answer crowd would have suggested for easy meals for divorced/single parents.

If he's not a very good cook ... there's a great book called "Where's Mom Now That I Need Her" -- usually found in the cookbook section at book stores. This has SO many tips for anyone on their own. One of my fave things to make that is easy and the kids can help with is homemade pizza night. Buy the Pillsbury Pizza Dough, canned pizza sauce and a few toppings the kids like (pepperoni, ham, pineapple, olives, etc ...) and the pre-shredded cheese (there's a mix for pizza). Roll out the dough, spread the pizza sauce on (fairly light), put meat, veggies/fruits (well strained or pizza will be soggy) and then top with cheese. If you have Italian Seasoning -- sprinkle on top and bake according to instructions on pizza dough. Kids get to help and they think it's a great night with dad! ;)

Crock pot meals are the best! throw some meat, seasoning, vegetables in the crock pot at night, put it on low, wake up in the morning, put the whole crock pot in the refrigerator. Come home, warm it up, viola dinner is served. He can also buy the frozen meals that go into the crock pot. They are not bad either. These will be some time savers in the winter especially since the days are shorter and everything seems so rushed. You may want to suggest he buys a kids cookbook also. these way the kids can pick out kid friendly meals.

Fried Spam (or hamburger patties), mac-n-cheese and peas... the ultimate comfort food combo. You can always add a salad to the combo.

You can always stir-fry some chicken, finely-sliced onions, some of the garlic that comes in a jar with olive oil, a littel soy-sauce and a bag of frozen stir-fry veggies. Offer with a side of rice or you could boil some noodles and add them to the stir-fry.
