Probably would depend on how long it takes you to get out of L.A. traffic..
You could probably do it in two long (~10 hour) days. Just don't get too excited when you reach the Texas border, because El Paso is only about half way from LA to Austin, and after that it's a pretty boring drive.

You are looking at a drive of almost 1400 miles. Realisticly you can average 60 miles an hour considering stopping for fuel for you and the car. So that comes to a drive of 23 hours if you were to drive straight thru. Then you add in the time for all the stops you are going to make.

Phonix is about 16 hours, and I think Pheonix to LA is another 10-12 hours. So, you are looking at 26 to 30 hours of continuous driving, or two full days, using the fastest route. This could be much more depending on the route and how fast you are driving (for example, if you are in a u-haul truck hauling all your stuff, you won't be going 70+mph).

It took me 28 hours to drive from LA to San Antonio back in the 80s (lower speed limits, but roughly the same distance). I went straight through, stopping only for gas, food, and bathroom breaks. It shouldnt' take more than two days if you stop overnight in, say, El Paso.

About 19 and a half hours. You shouldn't do it all in one day. Stop over night in El paso of Las Cruces

Some of these answers are crazy. I drove from the mississippi Alabama border to san diego in 22 hours. I only stopped for gas, didn't stop to sleep, and averaged about 80mph. This probably isn't the driving your planning on doing but it should give you an idea as to actual time spent driving.
