Don't think it's folk tale but "Black Elk Speaks" is powerful.
Author: Neihardt. Check on web for "White Buffalo Woman" which will most likely lead you to books with compilations.
Not folktales but "Koyanisquaatsi" and "Powasquaatsi" are interesting films. It's an absolute MUST that you see video of "Dreamkeeper", a tv series about a grandfather and grandson's experiences while traveling to the annual Native American powwow celebration.

If you are looking to write about our stories and legends (they ARE NOT folktales) then connect with the Native American community. Short of that you can look for books on such things as: History, Myths and Sacred Formulas of the Cherokee by, James Mooney. If you want to narrow that down some I can give a link to a webpage that has several legends about corn, from different "tribes"

Go to the closest Library and ask for a copy of "A treasury of American Folklore" by B.A. Botkin if you're just after Folktales. If you want Native American stories ask for the book "Literature of the American Indian."
