In Austin, best overall (in my opinion) is probably Barton Creek Greenbelt - there's some busy spots (near the popular swimming holes), but there's a lot of solitude as well. It's pretty big and there are several trailheads. Also, further
West, near Loop 360, there is Wild Basin, and Bull Creek, both of which are popular with good reason. I also like Turkey Creek Trail near Emma Long park.
Depending on seasons/weather conditions, you may have to cross through running water on any of these trails (usually just rock hopping across, but there are some places on the greenbelt where I go and we have to wade through, just fyi.)
If you want to go outside of Austin, head West and you'll have a lot of options. Enchanted Rock is really neat, and has a lot of great trails around and over it.

Go to the Texas Parks and Wildlife web site, they have pretty good information about state parks in the Austin and Hill Country area.

I have been to Inks Lake, Colorado Bend, and several other parks and they all have good trails. Most of these are less than an hour from Austin and usually cost less that $5 for an entry fee.

Barton Creek, check at the overpass just past Cap of TX and Mopac, go on the access rd and you will see all the cars parked and access to the trails. Also, Cap of TX Hwy bridge, on the rock cliff side. And of course MT Bonnell- Great views. Enchanted Rock outside of Fredericksburg is great, and Marble Falls area.
