They ve developed hoofs, which allowed them to move faster and more protectively. They have horizontal bodies, which allowed them to create high speed running away from the predators. These are just some. Horses come from different parts of the world and they are different. Like Arabic would be very graceful, bred particularly for high class affairs. The ones used by the British during the medieval days were wide and low, more on the strenth side. Unfortunately i don't remember that exact name of the bred right now.

Once the forests that the first little horses lived in gave way to grasslands the horses made two major adaptations. They evolved to run on tiptoe which gave them more speed. Their digestive system evolved teeth that were able to grind the tough grasses and stomachs that could digest those fibers.
