I do a lot of interviewing, though not in food service.

A lot of interviewees, especially young ones, don't realize this is truly a 2-way street. You tend to think that it is you "begging" for a job. In actuality, the company is competing for you as well.

In regards to your question, it depends on the circumstance. Most importantly, if you do have questions, ASK! And you don't need to wait for the "Do you have any questions" query from the interviewer. It is a 2-way street.

But in general, there will be three types of people you will be interviewing with. The ultimate supervisor, a company human resourses person, and often, a non-administrative worker(s).

The easy one is the non-administrative worker. Most likely, they have no desire to be interviewing. They hate it, but have to because their boss told them to. They are usually as uncomfortable as you and just want it to be over with. So for them, the best response is "If I get hired I'm sure I'll have a lot of questions for you, but for now, no. You did an excellent job presenting the work you do.

For the others, instead of just saying "No" if you really don't have any questions, try "Not right now. I have a lot of information I have to digest. If I do end up with questions, would it be proper for me to contact you either by e-mail or phone? (If they respond positively) What would be the best, nonintrusive way for me to contact you.

This shows that you are serious about wanting the job, yet being professional in that you need to evaluate them just as they are evaluating you.

Hope this helps.

I like to "interview the interviewer." It is always a good idea to know what you are getting into when you take a job. Use this opportunity to find out about the work environment or the company itself.

Ask them what exactly they are looking for from the person they will hire.
