An addendum to what chefgrille said. Some chefs rarely cook. This depends on the size of the kitchen. In a small kitchen the chef is much more likely to get his hands dirty because he (or she) doesn't have teams of cooks to do all the manual work. I think it's harder as a chef in a small establishment because you do have to still do a lot of cooking, in addition to the admin side. Either way, you're going to be much more than a cook. And more than purchasing, receiving, menu development, quality and portion control. You're going to be teacher, coach, babysitter, judge, jury and executioner.

Culinary arts is not only cooking, but the understanding of the hows and whys, portion control, marketing, everything including cooking. Take culinary arts, and they'll throw a lot of business classes at you too. A chef actually rarely cooks. They're more on the book side with planning and decision making.
