In consideration of traveling with a family of 2 adults and 2 (under 7 yrs old) children, with 2 lights strollers and 2 small suitcases. Which train is the best way to travel? Are there long walks/climbs/different stations between change of train? Any information is greatly appreciated.

Raileurope is not a train. It is not even a train company. It is only a travel agent that re-sells tickets at inflated prices to tourists who don't know any better.

Same applies to Italia Rail.

Avoid such third part resellers at all cost, as they add a 20-50% markup to the price of the original train ticket, and provide few additional benefits.

There is only ONE noteworthy rail company in Italy: Trenitalia. It operates most of the long distance trains. Buy the tickets directly from them, either on the website (see below) or on the train station. Make use of special offers and buy the tickets well in advance and you can save 50% or more compared to the standard fare.

There will only be one train company running the trains, although in some countries the high speed trains are run by different companies, those companies are owned by the company running the normal trains.
Italia Rail and RailEurope are just companies selling the tickets for the Italian railways, Trenitalia is the official company or site for all to do with trains in Italy as far as I can find, so go with them.
