Check out Booker T. and the MG's. They covered much of the Abbey Road album on this in 1970:

George Benson covered all of Abbey Road three weeks after it's release. It titled "The Other Side of Abbey Road" and it's very good.

I thought one of the most innovative and creative "covers", if you can call it that, was by one of John's good friends, Harry Nilsson. On Harry's debut album,"Pandemonium Shadow Show", he took Beatles song titles and strung them all together in a coherent manner and called it "You Can't Do That". Of course it contained "You Can't Do That!"

If you want to speak of ~literal~ "covers", you, better than most people, would have to admit, that the COVER of "We're Only in it for the Money" by Frank Zappa and the Mothers of Invention would HAVE to qualify as the best "cover" of a Beatles ~cover~ in existence! ;)

Rock didnt start with the Beatles. They did cover songs of 50's artists. " Let it Be Me' was also the title of an Everly Brothers hit.

Ever heard of the group Sparks led by the Mael brothers, Ron and Russell. They did I Wanna Hold Your Hand which I think was simply awesome. It was done in a slow jazzy manner. Really unique.
