I personally say Ibanez with a long "I." Eye-buh-nez.

But I prefer Gibson anyway.

Assuming the name is Spanish or Latin American in origin, Ibanez would generally have a tilde (~) over the "n", and would be pronounced:

ee BAH nyez

(Note: "BAH" as in "bah, humbug".)
