With sleep the respirations and heart rate may slow up a little but all other body functions continue pretty much normally. In hibernation the body metabolism (respirations, heart rate, body temperature, other body functions) slow down to a great degree and sometimes are barely perseptible. Some reptiles respiration through the lungs ceases and they obtain enough oxygen by exchange through the skin. Hibernation enables an animal to go without food for many months.

Now there are varying degrees of hibernation. Many animals in the south will hibernate and become domant during cold days but if the weather warms enough for a while they will become active. Usually animals in cold winter climates go into a deep hibernation and once they become dormant, they do not wake and won't become active until Spring. If they are in a deep hibernation state, they can not be awakened like you could if it was only asleep. Awakening from hibernation takes hours or days.
