If beauty is in the eyes of the beholder,
Then (the) colour (of roasting coffee beans) must be in the nose of the be-smell-er.
If this is a survey, my perception is that the colour of the smell is the same as the colour of the taste and colour of the fluid when cream and sugar are added to my preference: light brown, like the inside of a "Coffee Crisp" chocolate bar.

sunrise, traffic, fog, scattered newspapers, breath...your question conjures images rather than a singular 'color'. if i 'had' to answer to save my life or pass a class or assignment then i'd have to say dark brown. something 'roasting' would typically be dark brown.
