No; they are only into wood. Of course, if your sheetrock is held up by 2 x 4 wood studs, you may still have a problem.

Well, not exactly. They may chew through it to get to and from the wood support behind. So if you see damage in the sheetrock it could be from termites or carpenter ants. Mystery holes in sheetrock or sheetrock crumbling (say from moisture) should be invetigated.

they sometimes eat the paper backing used on sheet rock, but not the sheet rock it's self
