Sight -- probably because i have reaalllly bad vision, and the jobs i love would be impossible without it.
Touch -- can keep you safe, specially if you lose vision!
Smelling -- can keep you safe, if you dont have touch or/and sight, before you eat/taste something.
Tasting -- ......... I would terribly miss the taste of chocolate.
Hearing -- if you have all other senses, and try to keep yourself safe, you will be fine.
So I would rather lose hearing over any other.
Then again, hearing is my best developed sense... So I wonder if this could have anything to do with my choices :)

most of all, I wouldn't want to lose touch or sight or hearing...but mostly touch. If I kept only sight I think it would promote my being judgmental of the way people look, and if I only had the sense of hearing, I would go crazy because I am already annoyed to the max by little tiny noises. I couldn't imagine not feeling anything for the rest of my life.

If I had to loose a sense, I'd go for hearing. I could learn sign language and my life would pretty much go on as normal.
I am a writer and photographer so loosing hearing would be a hassle, but I'd adapt.
Loosing any other sense would be a grave handicap.
The senses of taste, smell, and touch are very important for personal safety. The sense of smell tell you when you are near many poisonous substances, smoke, etc. Touch tells you if you are being injured, sight enables you to navigate in the world.
People who would give up "touch" or "smelling" would be willing to endanger themselves.

I think I would want to keep my hearing more than the others...Touch would be a close second....sight next...then smell then taste....
If I could hear and not see, then I could get used to my surroundings by simple noises that we take for granted everyday...It would be hard, but possible...If I kept my hearing then I could hear my kids and husband telling me they love me,or feel their pain when they are upset and hear the emotion in their voices....touch comes in a close 2nd though....I agree Jamino, it would be hard to live without touch
too...but I choose to keep my hearing....

sight (so i can see the bus coming i cant hear)
smell (so i can smell the gas leaks i cant see)
touch (feel the burning pain if i cant see or smell a fire)
hearing (so i can hear the bus coming i cant see)
taste (not being able to taste smoke of a fire i cant feel)
I would want to be left with sight if any. to many wonderful things in this world that I would miss not being able to see.

Sight- Seeing is our most primary guidance form of guidance, plain and simple.
Touch- Being able to feel is very important. How else would you know if something is wrong with you that you can't see?
Hearing- Important, but losing your hearing wouldn't be as difficult as losing your sight.
Smelling- Handy, but not vital to living.
Taste- Purely a luxury sense.
