I know this is a popular topic but I was wondering if some people can give me insight on my personal needs:

RIght now I am leaning toward the E6850 processor. I do not do ANY video editing and I only do one task at a time. I enjoy playing games and when I play them I want to enjoy myself (Company of Heroes, Flight Sim X, Battlefield 2, etc).

I know that Quad core is the future but I would rather use the higher FSB speeds and the faster processing speed right now since no application really uses quad core technology yet and in a few years buy a quad core chip (my motherboard is going to support both core 2 duo and quad). I am not planning on overclocking at all. In performance testing, the E6850 was very close to the quads and even outperformed them on certain tasks....but on almost every forum I read, people are recommending the quads over the Core 2 Duos without even taking how the chip will be used into consideration. Any thoughts on this? Thanks in advance!

There two schools of thought on this - one says you can always OC the Q6600 to get E6850 performance now, and take advantage of the quad cores when the games evolve in another year or so, but this will require a substantial cooling solution, since the quad puts out more heat than a C2D does. The other school of thought is to 'build for today' and worry about tomorrows technology when it gets here.

Personally I build for today. Go with the E6850.

You are right in choosing the E6850. It is unbeatable at stock speeds. Q6600 beats it when overclocked.
Benchmarks don't lie:

The Q6600 is greater applicable than the E6850 if thats what your asking. the value is simular, and the quad cores are greater present day, with 4 seperae cores makes processing plenty swifter interior the destiny era. The quad middle is applicable for game enthusiasts, pictures and video modifying.
