Im having trouble beating the goalie on breakaways and getting around defenders on a 1 on 1. I dont have the best speed, so i cant always try to take it wide on the defender and speed around him. Any help is appreciated for both.

No such thing exists..................if it did, somebody would have found it by now, and the NHL goals record would have been smashed to oblivion.

A good defenceman cannot be deked. If he plays his position well, he is staring at your belly button, and you can't go anywhere without that. That is what made players such as Paul Burrows, Bill White and Rod Langway all-stars. They didn't care about the puck, they only cared about the man, and more often then not, they took care of them to the tune of 13 post-season all-star berths and 2 Norris trophies.

Breakaways can be approached pretty simply. If the goalie challenges you you have to deke and if the goalie stays back you should shoot. What deke to use depends on the goalie, I usually fake a shot bring the puck to my backhand and then go back to my forehand and slide it in.
Beating defenders one on one is tough without good speed. You're best bet might be to come at them as fast as you can to try to back them off. If they don't challenge, you should start going to one side of them. If they think they'll be beat they'll commit to that side and you can quickly switch directions to go buy him on his other side hopefully for a clear shot at the net. I'm a defensman and it's always toughest defending against guys that are going fast. So basically instead of going around him you make him think that's what you're going to do but then cut back to the middle. I should note that that is not the safest play and can result in a lot of turnovers but it looks great when it works.

Just watch any one of Jusse Jokinin's many shootout goals for the Stars, and you should have 2 or 3 moves that will net you a bunch of breakaway goals.

A successful scorer will have two plans in his head going to the goal. Depending on where the goalie positions himself determines which type of shot to take, either a shot from distance, or a deke move in tight. If the goalie starts out out in front of the net, and fails to move in towards tha goal at the same speed as you, it is easier to move laterally, and make a shot in tight. If the goalie moves backwards into the net too fast, you will have an open corner, almost every time. You just have to be able to react to what the goalie does. Make him make the first commitment, and he will be easier to beat. If he makes you commit first, you don't stand a very good chance of beating him.

One deke that works is to look like your moving towards the boards as if your gonna go speed around him, but the moment he crosses over you turn sharply away from the boards, then you've got a clear shot on the goalie.

Play it cool until you get to the defender, then like you said, speed by him, dont move to soon. He will have to turn around to catch you, so he will lose a stride or two. A good defender will watch your hips. That way he can tell what way you are going? If you can figure a way where your hips go one way and you go the other..haha
On your break away, either shoot for a corner, or wait for the goalie to make his move first. You dont need any fancy footwork, its a waiting game. Pick your spot and shoot.

Try the triple deke if you can (left-right-left). When you have average speed, it will certainly help...just ask Brendan Shanahan. While he could never be mistaken for Mike Gartner in terms of wheels, Shanahan does know a thing or two about scoring goals (kind of like that Gartner fellow).

On a breakaway, don't wait till you are too close in. Make one move and take a shot when you're roughly 10 feet out.

I always like to fake forehand and very quickly go to back hand, very quickly going to my left (I am right handed).

ok thats for breakaway.

A good deke to get past defenders is to quickly pull the puck towards you and at the same time cross it right past your skates, so close it almost touches both skates. I am right handed so I pull towards left.
