I use a lot of minor 7th chords and a lot of 13ths.

I would have to go along with other posters who named the "dominant seventh" and it's variations. For jazz it is always a variation, usually the minor or including the sharp 5. But the predominant one for jazz would be sharp 9 (gives you a diminished chord in another key) with the sharp 11 close behind.

I'd say the dominant 7th chord, and variations thereof, such as 7b9, 7#9, 9, 11, 13, #11, etc.

Dominant 7th is the most used chord.
