They're great unless you have fish. Small fish tend to end up as crayfish food - they'll catch the fish at night as they're resting. If you keep them with bigger fish, they tend to become the meal. The hard exoskeleton gives them some protection, but when they molt, the new exoskeleton is soft for a while so it can expand - this is when larger fish can attack and eat them.

You might be able to keep one with fish IF you have a lot of rock in the tank where they can escape in between pieces where bigger fish can't get to them, but don't underestimate hungry/curious fish, either. Rocks should be too large for the fish to move and the spaces between too small for the fish to fit.
