Many of the best places to eat are paladares (private restaurants), not in hotels - La Guarida, Cocina de Lilliam, La Fontana.
El Aljibe for the chicken rice and beans.
El Palenque for the lechon asado.
Delicacies - rice and beans; fritura de malanga, garbanzos fritos (more Spanisg than Cuban), pig roast on a spit, lobster, avocado (in season - like now), mariquitas, tostones, tamal en cazuela.

It really depends on where you eat , some hotels are better than others, i've been a few times and for the most part it was pretty good to great...
