Metal is simply heavy, riff-based rock with typically strong distortion. Hardcore as refers to punk is basically just louder and heavier punk, and some hardcore punk bands are extreme enough to be confused with metal bands (Poison Idea for example). Metalcore is one of about ten different genres you can arrive at by mixing the right combination of metal and punk, in this case, extreme metal and hardcore, although as I've said, some hardcore is close enough to metal already to blur the distinction.

The difference is negligible and only for nitpickers. Musicians don't care, only marketing people care(sometimes masquerading as musicians).
Personally I'm getting sick and tired of all these sub-genres and sub-sub-genres and micro-genres - its all a load of crap.

metalcore is metal with breakdowns
hardcore is somewhat of a cross between post-punk and metal...and it has breakdowns of course.
