Holland is pretty flat as is most of Belgium, both are cycle friendly.

For accommodation needs is suggest you check out :-

www.Hihostels.com

They are clean, friendly, not expensive, and professionally run. The staff will help you plan your next port of call as well. They will also give you free local maps and have lots of information on what is going on in their area.

They are particularly strong in Belgium but cover other parts of Europe. I use the site regularly. You can make bookings on line.

Enjoy

The Danube cycle path is one of the best and most popular bike routes in Europe.

This is why:

1. Most of it is separate from motor traffic.
2. Most of it is paved and well maintained.
3. Great scenery and historical cities.
4. Mostly flat or gently downhill. Remember, even though it takes you through the Alps, it follows the river so there are no steep hills to climb.

If you cycle all the way from Ulm(Germany) to Budapest(Hungary) at a leisurely pace it should take you about a month if you include stops along the way.

This is hard to answer because you do not state your level of ability!
Are you tour de France quality, or do you need to walk if the hills get steep and higher than a house?

If you want to do a tour in moderately easy conditions, just wind, the Netherlands.
Hills, or Mountains? France.

My parents have done Amsterdam - Paris a few years back, they were both 71 at the time, cost them a few more days than young people would use, but almost all paths for bicycles only.
That is only one of the many long distance routes.

The Netherlands have several, see this site, in Dutch, but click on the map and you can see a lot:
