it is more likely the lack of cafine that has helped your disposition.
please ensure that you keep your protien intake up. Lentils, nuts etc...or you may begin to feel a little tired.

Your anger and irritation--caffiene would certainly feed that, so naturally you'd feel better without it. As to meat, the only thing I can think is that, as a vegan, the extra cooking and chopping you have to do may be relaxing to you. That would certainly improve your disposition.
I envy you the self-discipline to change your life in such major ways. I'd love to have the discipline to exercise or walk, chuck the sugar. I'd lose 20 pounds a month for as long as I wanted.
But I'm weak, and taking those things away makes me depressed, irritable and mean to my family. So I'm taking little steps. Pilates 3x a week. Iced tea sometimes instead of soda.
Kudos to you. Way to go.

Caffeine can cause irritability and that can provoke anger, so giving up caffeine might be enough to reduce the irritability. Giving up meat??
Remember, your body and brain need protein, so if you are not going to eat meat, you need to find a substitute for the protein.

No wonder you feel less of those negative and hype

Caffiene causes irritability and For me insomnia and jitters. the meat thing I don't know I doubt it has anything to do with the anger and irritability.

i heard giving up caffiene helps with easing anxiety. (well, actually i heard that anxious ppl should avoid caffeine)
