I think it depends on whether you have a North American prespective or not. I am Canadian and would write 'hon' but would say 'hun'. I also write 'mom' but pronounce it 'mum'.
I look at it this way: Language is about communication. If folks understand your meaning, then that is what is important. (But I'd say... HON *grin*)
That being said... for pete's sake... the word is colour... and NO! I don't spell it 'wrong'!
