To cool it down. It turns off automatically when it is cool enough. Read your manual.

its the thermostat ..it tells the fan to keep on running until the oven reaches a certain temperature ..and then it will cut off ..its all to do with safety

i dunno so does mine, it goes off when i turn off the oven but then it comes back on, very odd
