Prejudiced is a pre-concieved notion about something or someone. For example ... you won't even try eating an apple, because your Mother didn't like them. Or it can be something you hold to be true after brief experience ... example .. the first dog I met bit me, therefore all dogs are bad.
Anyone who say they are not "prejudiced", doesn't understand the word. We all have our own prejudices ... its how we act on them that matters.

Prejudice, I believe, is latin for pre judge. If you use judgmental words you are pre judging without even meaning to and it causes you not to think straight and we all know we want to think straight.
