There are lots of plants that will do well under an oak tree. Look for
1. Shade tolerant
2. Plants that are easy to clean around and will tolerate a heavy load of leaves in the fall.
4. Plants that do well in your area.

My yard has about 20 oak trees and the issues above are the only ones I need to consider.

There are some ornamental grasses that do well under oaks. Check with your local nursery, or preferrably one that specializes in natives, and see what they recommend. Ornamental grasses are very easy to maintain and do not require a lot of water, things you look for when planting under oaks.
