We are going straight out of the wall, but the outlet will only be about 12" above our wooden deck. How hot is the outlet on the pellet stove chimney?

The chimney on a pellet stove doesn't really get all that hot. The manufacturers want it high, but that is so the outlet is above the snow line. You will have to remember to check the outlet to make sure it is not blocked by snow if you live in the snow belt.

This is a stove that smoke and has fire just as any other stove has, check with your building codes in your area but, I'm sure they will tell you they have to be the same as a regular chimney. Usually it's about three feet above the highest point of the roof line.
