It gives them something to do while the rest of the dialogue plays out. People talking is boring as hell. People talking while doing something even as mundane as making and drinking coffee is far more interesting. A simple plot device.

A lot of people have coffee with desserts. My family only does it when there's company, but I guess some people do it on a regular basis.
I assume they'd use decaf if sleep were going to be a problem, or they're going to be up for a while anyway. I don't know of anyone who goes to bed immediately after dinner, and caffeine never affects me for more than a couple of hours.

LOL I have coffee after dinner sometimes..It helps when you dont eat dinner at like 9pm.. If you eat dinner at a normal time like 6 or 7pm it will wear off by then...
personally I dont have a problem drinking coffee 10min before bed though :) we all react differently with it

They don't. In the Bob Morris novels, Zack 'the Sack' Chasteen usually has four or five glasses of rum or some other alcoholic drink.

well, to me, there is nothing better than a cup of very strong coffee with dessert, it is quite common. If you watch in restaurants a lot of people order a cup with dessert.
it does not keep me awake
