I think you'll find it's because many of the original leaders were Masons. The Masonic Lodge has that symbol. I'd go to www.google.com and type in Masonic symbols and you'll probably find it there along with other information about it.

Most of the founding fathers were Freemasons. This is probably because at that time, almost everyone that wasn't either royalty or a complete serf was a Freemason. The images on our currency corresponding to images of Freemasonry were because they were images that they all knew.
Look, if our founding fathers had all been Beatles fans, there probably would have been a Yellow Submarine on our currency somewhere, with exactly the same meaning as the Eye. Someone liked the look, and that's about it.
