Cook and serve is much better than instant. It has a better developed taste due to the cooking process. The instant falls short on chocolate flavor and a bland raw taste. Cooked pudding uses cornstarch as a thickener and instant uses gums and other chemicals that work in cold liquids. It really takes no longer to make homemade since it's the same ingredients, cornstarch, cocoa, sugar and milk. If you make it from scratch you can adjust sugar and cocoa for a darker chocolate taste. A trifle is a very nice dish so don't cheapen all that work with a "fake" pudding.
