There are a couple great series of textbooks - Thomson Course Technologies (http://www.course.com) and Microsoft Press. Both are sequences that follow the Microsoft Certified Systems Engineer/Microsoft Office User Specialist Examinations (MCSE/MOUSE) curriculum. THe MCSE/MOUSE program is a program that includes a test at the end to become a certified expert in the programs. There are different sequences for each of the Office applications (Access, Excel, Outlook, Powerpoint, Word).

Study the textbooks of IT of school children. It helps a lot as the instructions are given in a clear cut language.

Just use it and play around with it. Taking classes are great too and also the tutorials that come with it help a great deal.
