Strange things like clouds and darkness also get in the way. They may photograph a place 500 times before they get a clear picture. Things are about to improve.

It takes a long time to photgraph the world. It takes photos of certain areas more frequently, but the 6 year lag implies it takes around 6 years to do the whole world, before it comes round again

Google Earth isn't out of date. It uses the latest satellite images available from the web. They are out of date.
Google just launched it's own satellite and will launch a second one soon.
In time, things will improve rapidly.

because it is photographing the ENTIRE EARTH. that is a rather large thing to photograph.
