How could something 'happen' after the end of time?

well, that depends on who you ask. An historian will tell you that since recorded history as we know it today began only several thousand years ago when civilizations began and started to record the passing of seasons as years, the end of time will probably coincide with the end of civilization. The calendar that the Romans used since the time of Jesus Christ is pretty much what we still use today to record time. So, when and if today's civilizations fall (due to any one or combination of a dozen or so global disasters) theoretically, that is when the end of time shall be, unless someone survives to continue recording time. What happens after the end of all time, that is, the end of this age and the world as we know it, is where your guess is as good as mine. Someone could survive to continue recording time, or, if there is a complete devastation of all civilization, and very few if any survive, the concept of time will have to be relearned and recreated in the minds of people who survive in a new world.
Ask a scientist and you would have another answer:
Another possibility is that nothing terrible happens in the next century or two and we are somehow able to colonize space. Then those living in space may use time, but it would represent what the time on earth is. In space, the concept of time might not exist, especially if those living in space lived on space ships or satellites that did not have to orbit the earth or sun. Obviously, they might not record time in the same way that those on earth did - with 24 hours days, 12 months of earth orbiting the sun, etc... since, theoretically, there would be no night in space.
A Christian theologian (religious scholar) would tell you to read Mathew Chapter 24, verse 3, where the disciples ask Jesus,"Tell us, when shall these things be? and what shall be the sign of thy coming, and of the end of the world?" If you read the rest of this chapter and chapter 25, you get a vague idea of what to look for, but it doesn't give exact dates or anything like that, so we don't really know the exact date of the end of our age or world in religious terms, we just know what to look for.
And also chapter 21 and 22, at the end of the Book of Revelation, it says nothing about the end of all time, but that "the first heaven and the first earth were passed away; and there was no more sea." If you continue reading these chapters, it tells you basically that the eternal Kingdom of God is established for those that believe in God. So, in religious theory, there is no end to time, but time merges with the eternal, with forever and timelessness.
Personally, I hope we find a way to colonize space. In this way, we would become masters of time and not subject to it, like we are here on earth. Nor would we be subject to global disasters that happen here on earth.

There really is no end to time in our current living relationship. After we reach the speed of light, time is not present there. But as long as we live in an area where we do not surpass the speed of light, time never ends.

The universe is a finite space-time quantum entity.
It has a maximum and minimum size.
It cannot exist above or belows these limits.
The universe started from a nothing with a potential.
When it stops it will enter a state of eternal nothing and never occur again.

Time is just like, never ending, and it will always be. But i feel strongly, that what you are seeking, is : What will happen at the end of this time period, or also referred to as this age !
You have heard of the dark ages, right? well that was one time period ,or age, in history....
