I grew them out of curiosity, but I haven't ever seen a ripe tomatillo - should I wait for the 'cover' to wither, or pluck them when they reach a certain size or color?

You can pick tomatillos that are firm and bright green as the green color and tart flavor will add to any dish.

Tomatillos, often called Mexican green tomatoes, look like small green tomatoes with a papery shell. They have a tart taste and are used for sauces and salsas in Mexican cooking.

The tomatillo is actually used when it is still green. Here's a photo showing one of the tomatillos just turning a light yellow and indicates that it's too ripe:

"When growing your own fresh tomatillos, they are ready to harvest when the husks burst." Small tomatillos are sweeter than the larger, golf-ball-size ones. The condition of the "husk" is a good indication of the freshness of the fruit. The husk should be light brown and fresh looking (not shriveled and dried). If you are not going to use them immediately, leave the husks intact, wrapped around the fruit like little paper bags. Either store on the counter or in the refrigerator. They should never be stored in air-tight containers. They will keep well for several weeks to a month. They may also be frozen whole or sliced.

P.S.I'm assuming you have a regular green variety tomatillo ...there are some varieties that are supposed to turn other colors like purple:

Good luck! Hope this is helpful.
