The fun is in the chase. Plus I like to here him go splat when the roadrunner forces him over the cliff and he is doing the bicycle thing with his feet or......
maybe where he lives roadrunners are not on the menu or
he is possessed about getting the roadrunner or
he has stock in Acme

It is all about his obsession with catching Road Runner. Besides, he probably wants revenge after being made a fool of so many times.
