No,seriously, you could try stopping off at GUNDAGAI or HOLBROOK.
The total journey can be done in 8 -9 hours straight off. I would strongly recommend at least one coffee break and a rest up. You don't really need to stay the night anywhere since the journey is easily done in a day.
Just make sure you get plenty off rest periods and time to stretch your legs a bit.

I always used to stop at Yass for gas... and junk food. If you are going to overnight, you are probably better off stopping at Albury. There are not really any other remotely pleasant stops if you are travelling the Hume Hwy.
If there are two of you sharing the driving, you shouldn't really need to stop overnight though, unless you really want to.
