Chinese cooking method often has you marinate the meat. Sometimes one of the ingredients in the marinade is baking soda, which tenderizes the meat but sometimes gives it an unusal texture.
There are plenty of Chinese recipes where they leave the meat on the bone. Quite a few where they cook a whole chicken, then hack it into bite-size chunks with a big heavy cleaver. But Western customers complain about there being bones in the meat, so then they steer away from this.
Beef is another matter. Chinese cuisine doesn't have slabs of meat like steaks or bone-in roasts. Maybe a pork chop, but that's about it. So what you get is boneless cuts, cut small enough for stir frying, marinated like I said.

I have wondered about that too. . . how come the pieces don't look like the ones that I get when I cut up a whole chicken and cook it?
And the beef - thin and reddish edges? What is with that?
I have thought that the foods come to the "chain style take out places" in batches that are then recombined in house, but the freezer is full of the ready ingredients and they just heat/cook and combine. Am I right?
I do feel that China has doomed itself with the recent recalls and noncompliance to US/international standards. Sigh. and Bummer. I had considered emigrating one day, since I see the US going fast down some tube or other, but now I am having second thoughts. But I guess the outlying cities are not hotbeds of industrial gunk. Who knows. . .

The texture could feel very different from those so called "regular meats", but I guarantee you that those meats were as advertised and no substitutes were used. Many Chinese restaurants marinade their meats with a technique most people are not familiar with. A couple readily available ingredients were added into those meats to further break down the texture during marination. If prepared properly, the meat's texture will change very dramatically. Chise food is lower quality cuts of beef and chicken to keep the cost down. I doupt a chinese kitchen is equipped to cook your food in any other way than their way...

It is chicken. It's the way they prepare it that makes it taste different. If they serve the same way as Americans do, it'll be American food, not Chinese food.
