I gotta go with 'Blade Runner'. Every time I see it I catch some small, subtle thing that I'd missed before. And there are just a -ton- of philosophical and ethical questions that it raises.
'Dune' is another one. But you really have to read all of the Frank Herbert books before it completely makes sense.

I just saw this one, it's a few years old , but it's called "Innocence". Remarkable movie. Another really good one was "Uncorked".
