I was always curious about it, so I did learn sign language.
Now, though, I find that most deaf people having a serious conversation amongst themselves don't appreciate being interrupted by hearies who want to "practice" on them.
If I see deaf people who are NOT conversing already, though, I'll start a conversation with them. And at meetings/conferences, I make sure they don't get "left out" of things, although I don't usually have the time to be an actual interpreter for them.

I learned sign language years ago, and people are often surprised when I greet them in passing or make a "comment" about something one of them has just said.
The more languages you know, the more people you will get to meet.

Yes, I find it fascinating. I learned the alphabet and that's all. If my daughter could use her hands in a purposeful way, I would teach her sign language, but she cant use one hand at all and the other is very limited.

I think it would be neat to be able to know how to sign. I wonder how difficult it is to learn.....
