You need to find out BEFORE you take the job !!

It is an unfortunate fact that the more 'fancy' the Restaurant the more likely it is that the minimum wage Waiters 'tips' will be collected (stolen) and spread around, mainly to the Chefs, Head Waiters etc .. by the 'tronc' system ..

NB> As a customer, you shoud NEVER 'write in' a tip on the Credit Card bill (in the space provided just before the total) .... I have asked many times, and whenever I got an answer, the Waiter confessed that they NEVER recieved 'tips' left in this way ..

Do you mean tips left by clients in restaurants and hairdressers, etc?
Practice varies from employer to employer. Some employers allow employees to keep the tips given to them personally. Some employers require that all tips are given to a senior person in the organisation (called the tronc master) and that person divides out the tips between all the staff. The thirs way is that the employer will retain all the tips and include them in staff wages.
