Creamed Chipped Beef and Creamed Tuna on toast were the two main foods in my house when we were growing up....I haven't had either in YEARS and as soon as I read your question, I got an instant craving for CCB.. I can TASTE it... Of course I love it.... not only for how it tasted, but for how it reminds me of being together at the table as a FAMILY---being young and all the laughter we used to share---my brothers and myself....we were DIRT POOR but didn't know it because we were always having a great time.. Thanks for the memory... now I have to go to the store and get some chipped beef...thank goodness for 24 hour markets.

Takes time. You would need to buy some very lean beef and salt. You might also want to use Sodium Nitrate as additional preservative. You can also, depending on your local grocery stores sometimes find Morton Curing Salt. Don't say EWWW but Beef tongue is actually a prefered meat for this. The meat is rubbed every day or packed in the salt cure and then smoked. Hang in a cool dry place to dry. A tongue will take about a month. Aging for longer will develop a more distinct flavor. But the stuff in a jar has the same ingredients so should not be an allergy problem

Stouffer's Creamed Chipped Beef is great. Just nuke it and dump it on toast. Long time since I had that. Thanks for reminding me.
Nothing strange about it or Stouffer wouldn't make it!
