I found stories about people winning lawsuits after being fired because of religious tattoos, but nothing specifically cover your question.

It certainly is possible. California has a very broad anti-discrimination law called the Unruh Civil Rights Act. It has been used to successfully overturn arbitrary dress codes at restaurant, so I'm sure some lawyer in California would take up the issue of "tattoo discrimination".
