Which country do you live in? Different vaccines are approved for use in different countries.
For example in Japan I believe MMR is no longer available as one dose.
They appear to be available from Merck

Monovalent Measles, Mumps, and Rubella
Attenuvax (measles), Menuvax (rubella), Mumsvax (mumps), by Merck: all are thimerosalfree
or have undectable amounts of thimerosal left from the manufacturing process.
MUMPSVAX®

ATTENUVAX®

Menuvax
I can't seem to find the link.
Now you have to decide which you want to use, if any. I am facing that decision too. However I am in Canada and different vaccines are or are not available seperately.

They DO come separate... some people have "moral reservations" on parts of the MMR.

There are plenty of vaccines to mention like hepatitis ,oral polio, DPT,MMR and etc. They come from different containers and with specific dosages and intervals to be given.

They do come separately. It will cost more out of pocket. Your ped may not be willing to order it, though.
Why do you want to separate. There are some good reasons, and some crazy reasons.

They do manufacture the products as monovalent vaccines but it is more likely that your MD does not purchase them because they are seldom used in monovalent form.

You can always find a new pediatrician if yours is unwilling to be helpful. My girls have no vaccinations at all, but even if you want to do them more slowly I think your doctor should support that decision.
