Depends on the mollusk you're talking about.
Most bivalves (such as clams and oysters) are filter feeders; they have specialized organs to catch very small edible particles that float in the water.
Among gastropods (snails and slugs) there are some carnivorous predators, and many are grazing herbivores (like the snails that eat our plants!).
Cephalopods (squids, octopuses, cuttlefish) are carnivorous and predatory.
Other, less known mollusks such as chitons and tusk shells are either herbivores or detritivores (they eat very small pieces of organic matter).

Mollusks eat many different types of food. Mollusks that eat plants are herbivores, mollusks that eat animals are carnivores, mollusks that eat both plants and animals are called omnivores, and mollusks that eat dead and decomposing material are known as detritovores. They are found in a wide variety of ecological niches in marine, freshwater, and terrestrial habitats. Some mollusks live thousands of meters below the surface of the ocean, while others live thousands of meters above sea level, even on the tops of mountains. They can also be found in tropical rain forests and deserts. All in all, mollusks have found a way to live almost everywhere.

Those with which we are most familiar - the land slugs and snails - have a radula, a sort of rasp with thousands of teeth. This is used to scrape tissues from plants. These then pass into the gut for digestion. If you are looking at the whole range of Mollusca, then you are going to have to do a bit of research and reading - but it's fascinating stuff.

Cone shells (a kind of snail) have a poison harpoon with a specific vertebrate neurotoxin. They sniff out fish and harpoon them and eat them. The toxin would kill you, too, and very quickly. Fortunately, they are only in deeper tropical waters so you aren't likely to step on one.
