It means not using any artificial chemicals such as pesticide sprays, slug pellets etc. on your garden, but only natural products and fertilizers.Use compost that you make yourself, in a bin, from waste vegetable matter left over from cooking etc.This is good for the planet as less goes to landfill sites and makes the soil lovely and rich. Basically, you're not going to be eating a load of toxic chemicals, some of which we don't know the long-term effects of yet and neither will the wildlife/pets that come into your garden.

Healthy soil leads to healthy and nutrient dense plants that are far less likely to be affected by insect pests and diseases. balance means that you have both good and bad bugs, fungi, bacteria, etc.. The idea being things in balance like insects means they will not get out of control and overwhelm your plants
Organic gardeners stay away from synthetic fertilisers and pesticides. That said they can use non synthetic fertilisers and pesticides. natural fertilisers include compost, animal manure, green manure, fish emulsion, kelp, rock powders and raw mined minerals. Pesticides (pest control) include soap sprays, garlic sprays, hot peppers sprays, companion planting, beneficial insects, milk, dormant oil, neem, etc..
Weeds are controlled by a combination of tilling, hoeing, mowing, and mulching.
Organic gardening is looking at your gardening environment holistically rather than linearly
